Keto Chili with Green Chiles
This Low Carb Chili recipe is the perfect comfort food. You will not miss the beans. The Adobo seasoning and smoked paprika give it a gourmet flavor, but still qualifies as comfort food.
Chili did not originate in Mexico. It came from the Spanish Canary Islands when families immigrated from there to Texas in the 1700’s. It’s fun to know you’re taking part in a dish with a lot of history.
1 lb of Grass-Fed Ground Beef (15% fat/85% lean)
2 slices of bacon cut up or bacon fat
1/2 large onion
4-8 cloves of garlic
1 2 tsp of real salt
1/2 tsp of fresh ground peppercorns
1 15 oz. can of diced fire roasted tomatoes with green chiles
1 4 oz can of diced green chiles. ( mild or med)
1 6 oz. can of tomato paste
1 tsp Cumin
2 tsp Adobo seasoning
1/4 tsp of smoked paprika
6-8 drops of liquid Stevia
1/2 c. Water or beef bone broth
In a cast iron stock pot sauté the onion in bacon pieces until translucent, add garlic and sauté until fragrant. Add ground beef breaking apart with a spatula, add salt and pepper, and continue until browned.
Add the diced tomatoes, green chiles, tomato paste and seasoning.
Add water or beef bone broth.
Simmer on the stove top or bake in the oven (275*) well covered for at least 1 hour.
Serve immediately with the topping of your choice: shredded cheese, sour cream, cilantro, and avocado.
Can be frozen for meal planning.
