Keto Chocolate Mousse with Mint Creme
Chocolate and Mint are synonymous with Christmas. This mousse makes any holiday dinner feel a little fancier. This recipe is rich and creamy, with a hint of mint in the whipped cream that doesn’t overpower the taste. It’s a perfect dessert for entertaining. It can be made up to 8 hours ahead and served in individual stemware.
Mousse Ingredients:
1 oz. cream cheese
2 TBSP unsweetened cocoa powder
1/4 c. Allulose granulated dissolved in 1/8 c warm water
3/4 c. Heavy cream
1 1/4 tsp vanilla
10 drops of liquid stevia
Cream together cream cheese, unsweetened cocoa powder, and dissolved Allulose. Add heavy cream, vanilla, and stevia and whip until stiff peaks form. Set aside.
Whipped Cream:
3/4 c heavy cream
1/8 c Allulose dissolved into 1/8 c warm water set aside
1/8 tsp mint extract
1/2 tsp vanilla
10 drops of liquid Stevia
Whip until soft peaks form
Alternate layering of Chocolate Mousse and whipped cream in a fluted glass. Chill until served. Garnish with Lily’s Dark Chocolate Bar shavings. (Keto)
