Lamb Chops & Roasted Radishes (KETO)
This meal has been a family favorite for many years going back 3 generations. Easter is our traditional time to have Lamb. Whether it’s leg of lamb or chops we always serve topped with mint. Our favorite sides are Asparagus and Potatoes Anna.
This year to keep it keto I added a new favorite, Roasted Radishes. You will be surprised how much Radishes taste like potatoes with none of the carbs.
4 lamb chops from the Loin 3/4“thickness (bone-in)
Season with Lunds & Byerlys Lemon Pepper seasoning
Preheat Grill to 500*. Grill for 4 minutes each side. Do not overcook. Meat should be slightly pink.
Top with mint spring and serve with mint jelly for a traditional Easter dinner.
Excellent accompaniment with the Lamb Chops
Roasted Radishes
Ingredients:
1 1/2 lbs of radishes
1 clove garlic, minced
2 TBSP of olive oil
1 Tsp. Lunds/Byerly’s Lemon pepper
1/8 tsp rosemary
1/8 tsp thyme
1/8 tsp salt
Shredded parmesan cheese as garnish
Instructions:
Preheat oven to 400* (Convection)
Cut radishes into wedges
Toss the radishes and garlic in the olive oil and then add seasonings.
Line a baking sheet with parchment paper. Spread radishes on parchment and
Roast for 30 minutes flipping halfway through for even browning.
Remove from oven and toss with parmesan.
