I’m crazy about Pumpkin this time of year. The power of suggestion with jack-o-lanterns, and fall decor on every doorstep through Thanksgiving has me hungry for that spicy pumpkin flavor. No need to run to the store to buy Pumpkin Pie Spice. More than likely you have everything you need on hand.
Here’s the simple Pumpkin Pie spice recipe along with my Keto Pumpkin Waffles.
Pumpkin Pie Spice:
2 1/4 tsp. Ceylon Cinnamon
1/2 tsp. Ginger
1/2 tsp. Nutmeg
1/4 tsp. Allspice
1/4 tsp Clove
Blend together with a spoon until all one color. Store in an airtight jar.
Pumpkin Waffles:
Blend together in bullet:
2 large eggs
4 TBSP organic canned pumpkin
1 TBSP almond butter
1 TBSP monk fruit
10 drops of liquid Stevia
3 TBSP unsweetened coconut milk
1 1/2 tsp. Real vanilla
Add the dry ingredients to the liquid ingredients and finish blending in a bullet:
2/3 c. Almond flour
2 TBSP coconut flour
1/8 tsp. Salt
1 tsp. Baking powder
2 tsp. Pumpkin pie spice
1/2 tsp. Cinnamon
Coconut spray for Waffle iron or Chaffle maker
Allow batter to rest for 3 min.
Cook according to waffle iron instructions.
Enjoy with sugar-free syrup and/or blueberries and whipped cream.
