Keto Blueberry Muffins
Keto Blueberry muffins are a great side dish to accompany breakfast or lunch. They satisfy your taste buds with a healthy traditional treat that most of us grew up enjoying. You’ll hardly know it’s keto.
Combine dry ingredients thoroughly in a bowl and set aside:
1 2/3 c. Almond flour
1/3 c. Coconut flour
1/2 tsp. Xanthan gum
1 1/2 tsp. Baking powder
1/2 c. Golden Monkfruit
1/8 tsp salt
Mix together:
1/4 c. Butter softened
2 eggs
16 drops of liquid stevia
1/2 c. Coconut milk (unsweetened)
1 tsp vanilla extract
1/2 tsp. Almond extract
Add dry ingredients. Blending well.
Fold in 1/2 - 1 c. Blueberries
Using muffin papers, spray each one with a non-stick spray before adding muffin batter.
Bake at 350* for 20-25 min.
Makes 10-12 muffins depending on the size of the muffin tin.
Make 2 batches and freeze one for snacks. Kid-friendly. My grandchildren gave them the thumbs up!
Easy to thaw and reheat.
