Cilantro Lime Chicken with Riced Cauliflower
Hello, Friends! I whipped up this keto-friendly recipe that you're going to love. It's a Cilantro Lime Chicken and Cauliflower Rice and it's the perfect addition to any low-carb diet!
Meal Prep:
Marinate: 4 hrs ahead
1 lb of chicken breast
2 TBSP olive oil
1/2 c. Cilantro chopped
Juice of 1 fresh lime
1/2 tsp of Lemon pepper (Lunds-Byerlys)
When it’s time for dinner
Grill chicken over hot coals until juices run clear.
Riced Cauliflower: (Approx. 7 mins cook time)
3 cup finely chopped cauliflower
1 tsp of fresh chopped garlic
2TBSP olive oil
1/2 c. Red onion
1 1/2 tsp of Cumin
1/2 tsp. Adobo seasoning
1/4 tsp chipotle chile flakes
Heat Olive oil in a skillet
Add fresh chopped garlic and 1/2 c onion
Saute for a few minutes and add the spices and riced cauliflower
Continue to sauté until cauliflower is al dente. (Approx 5 min turning over so it doesn’t burn)
Accompaniment to chicken and riced cauliflower
Combine all ingredients:
heirloom cherry tomatoes cut in half (pint)
1 Avocado cut in chunks
Fresh cilantro to taste
1/4 of a Lime
Salt and pepper to taste
