Big Mac Chaffle-Keto
This is fun to make! Reminiscent of when we were kids and our parents went through the drive-thru to get a quick dinner! (we had no idea just how many chemicals and hydrogenated unhealthy fats were involved) Now you can make it with this recipe knowing you are providing all the flavors and keeping it healthy!
I make the Big Mac special sauce ahead of time so the flavors meld.
Gingerbread Cake with Warm Vanilla Creme
I have been craving the flavor of Gingerbread for the Holidays and wanted to figure out a low carb alternative. Excited to share this recipe. It gets a Blue Ribbon for that traditional flavor. It is great for snack time or dessert after dinner. This is low-carb with only 1/2 c. of molasses. (All the other replacements for molasses did not make the grade for a true holiday favorite)
Keto Russian Tea Cakes
These keto-friendly holiday cookies are perfect for starting off a festive season of celebration. They will remind you of Christmas past. They have the look of traditional Mexican wedding cakes with powdered sugar except with none of the unhealthy side effects of sugar-laden desserts. They can be stored in the freezer until ready to serve. They are worthy of company or perfect with a cup of coffee or tea.
Make Your Own Pumpkin Pie Spice: And then add it to My Pumpkin Waffles.
I’m crazy about Pumpkin this time of year. The power of suggestion with jack-o-lanterns, and fall decor on every doorstep through Thanksgiving has me hungry for that spicy pumpkin flavor. No need to run to the store to buy Pumpkin Pie Spice. More than likely you have everything you need on hand.
Sausage & Cauliflower Stuffing (KETO)
Sausage & Cauliflower Stuffing (KETO)
Don’t stop eating stuffing just because you’ve gone keto! This is perfect for your Thanksgiving dinner or any hardy fall meal. Great fresh flavor and crunchiness. Dried Cranberries are my favorite addition.
Keto Pumpkin Muffins with Pecan Crumble
Cold and crisp weather has me in the mood for anything pumpkin. These pumpkin muffins can be served for breakfast or great as an accompaniment with chicken salad for brunch. Easy to keep in the freezer and reheat on demand. They make a great grab and go snack.
Keto Coconut Macaroons
These sweet treats have always been my downfall until I found allulose as a sugar substitute.
I’m excited to share this keto version with you. Trying it out on my family is the real test.
Keto Bacon Brussel Sprouts
This can be a side dish or the main course. Brussel Sprouts are great any time of year. Pair with ribs, burgers, roast chicken, or grilled pork chops. It’s one of the most perfect foods for nutrients and detoxing.

Sweet Kreme Coffee Ice Cream

Lamb Chops & Roasted Radishes (KETO)
This meal has been a family favorite for many years going back 3 generations. Easter is our traditional time to have Lamb. Whether it’s leg of lamb or chops we always serve topped with mint. Our favorite sides are Asparagus and Potatoes Anna.
This year to keep it keto I added a new favorite, Roasted Radishes. You will be surprised how much Radishes taste like potatoes with none of the carbs.
Chaffle KETO Pizza
With the invention of the CHAFFLE maker all kinds of new recipes are popping up to utilize this tool. Chaffles are not just a breakfast item.
When you combine the chaffle and keto this is what is possible for a snack or dinner. This is fun to make with my Grands and oh so YUMMY!
If you’re keto you may already have these ingredients on hand. You will need a chaffle maker for 2 pizzas or you can use a waffle iron and make 1 pizza.
Keto Chocolate Chip Cookies
Coming up with a low-carb Chocolate Chip cookie reminiscent of childhood has been a challenge. You know the kind you dip in milk or eat warm right out of the oven, and you can’t just eat one. This combination is chewy and a little crisp. Using allulose has been a game-changer and adding a small amount of molasses brings out that brown sugar flavor. My Grandchildren gave it a thumbs up. Give it a try and let me know what you think.
Keto Chocolate Mousse with Mint Creme
Chocolate and Mint are synonymous with Christmas. This mousse makes any holiday dinner feel a little fancier. This recipe is rich and creamy, with a hint of mint in the whipped cream that doesn’t overpower the taste. It’s a perfect dessert for entertaining. It can be made a day ahead and served in individual stemware.
